A Functional Medicine Health Journey Of My Own Dr. Will Cole

Hi, my name is Yvette Johnstone and I am the newest member of the functional medicine team. I am really excited to be working with Dr. Cole and helping people on their journey to better health! Over the coming months I will be sharing my favorite recipes as well as my experiences working in the clinic.

FUNCTIONAL MEDICINE CONSULTATIONS FOR PEOPLE AROUND THE WORLD

I am always in search of new lunch ideas. I am a pretty picky eater and am not usually a fan of leftovers. Soup, which I love, is an exception; however not something I want to eat every day. Here are a few of my new favorites:

Bacon, Avocado Wraps

The great thing about this recipe is that the amount is very easy to customize for if you only want to eat this one day or multiple days. Make as little or as much as you want and save the bacon. I like to eat this alongside some plantain chips or fruit and you are good to go!

Ingredients

  • Organic bacon
  • Hearts of romaine leaves
  • Avocado

Directions

  1. Cook up your bacon
  2. Slice up your avocados
  3. Rinse off your romaine leaves.
  4. Once at work heat up (or eat cold, tastes great as well) bacon and place inside romaine leaves with avocado slices

Chicken Salad Wraps

Ingredients

  • Cooked, shredded organic chicken (see bottom of post)
  • Organic mayonnaise (I get mine from Trader Joe’s)
  • Apples, diced
  • Celery, diced
  • Organic BBQ sauce (optional-I like the additional spicy little kick this gives)
  • Hearts of romaine leaves

Directions

  1. Place shredded chicken, apples, and celery in bowl.
  2. Add mayonnaise and bbq sauce and mix to preferred consistency. I don’t like too much mayo or bbq sauce so I add less than I think I may like and slowly continue to add more of each if needed.
  3. Scoop mixture in romaine leaves and enjoy

Balsamic Spinach Salad with Chicken

Ingredients

  • Organic spinach leaves
  • Cooked, shredded organic chicken (see bottom of post)
  • Walnut or almond pieces
  • Sliced avocado
  • Dried cranberries
  • Balsamic dressing (see bottom of post)

Directions

  1. Assemble all ingredients together in bowl and drizzle with balsamic dressing.

Shredded Chicken

Here is where my BFF the slow cooker comes in handy once again. Cook up on a Sunday night and use in these lunch recipes the rest of the week!

Ingredients

  • Organic chicken breasts (however many you want to cook)
  • Chicken bone broth
  • Salt, pepper, garlic powder to season (optional)

Directions

  1. Place chicken in slow cooker
  2. Cover chicken with broth and seasonings of choice
  3. Cook on HIGH for 4 hours or LOW for 8 hours

Balsamic Dressing

Ingredients

  • Balsamic vinaigrette
  • Salt, pepper and garlic powder to taste

Directions

  1. In a container with a lid mix balsamic vinaigrette and seasonings of choice together.
  2. Place in refrigerator and use within a week.
