In this episode, chef and author Molly Chester joins us to talk about something we often overlook when considering the food we eat: soil quality. The soil we grow our food in determines the nutrient-density of crops which ultimately impacts our overall health. By examining our farming practices and our outlook around cooking and feeding others, we can restore our soil quality and achieve vibrant wellness as a community.
Molly Chester is co-founder and farmer of Apricot Lane Farms, a 234-acre biodynamic, regenerative farm in Moorpark, California, home of the feature film The Biggest Little Farm. Molly began her culinary journey attending The Natural Gourmet Institute of Health & Culinary Arts in New York City. From there she began private cheffing in Los Angeles with high-profile clients, and quickly realized that the flavor and nutrient density of food is directly connected to the health of the soil. In 2011, Molly’s food journey led her and her husband John Chester to start Apricot Lane Farms, with the intention of producing the healthiest, most flavorful food possible. Her new cookbook The Apricot Lane Farms Cookbook: Recipes and Stories from The Biggest Little Farm releases October 25, 2022.
