Holi Mane

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 1 tsp. vanilla extract
  • 2 cups almond flower
  • 1/4 cup ground flaxseed
  • 1 scoop holi ( m a n e )
  • 1 Tbsp. nutmeg
  • 1/2 tsp. ground ginger
  • 1 cup shredded carrots
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup raw walnuts or pecans
  • 1/2 cup raisins or chopped dates
  • 1 tsp. baking soda

Directions:

  1. Preheat the oven to 350 degrees. Line a loaf pan with parchment paper or grease with coconut oil.
  2. Add bananas to a large bowl and mash with a fork. Whisk in eggs, applesauce, and maple syrup and mix until smooth.
  3. Stir in almond flour, flaxseed, holi (m a n e), cinnamon, nutmeg, and ginger and continue to mix. Gently fold in remaining ingredients and stir until batter forms.
  4. Pour batter into the lined or greased loaf pan and bake for 50-60 minutes. Remove the pan and let cool completely before slicing.
