This week I sit down and talk all things food with Rachel Mansfield. Rachel has a way with real food, whether it’s through her amazing recipes, delightful Instagram food pictures or her wellness blog "rachLmansfield.” Her approach to food is smart, delightful and real and we discuss everything from how she got started sharing her food creations to her journey through infertility and a healthy pregnancy. Rachel is proof that living a healthy lifestyle doesn’t mean adhering to restrictive diets or giving up all the foods you love. You truly can have it all: delicious food, healthy ingredients and a great time in the kitchen!
Rachel Mansfield is the creator behind, "rachLmansfield," a hub for all things delicious food, mama life and more. Rachel is a cookbook author of, Just the Good Stuff, recipe developer, food stylist, podcast host and an avid fan of all things peanut butter and banana bread related.Rachel focuses on creating recipes made with wholesome and real ingredients - you know, just the good stuff. She develops recipes that are meant to nourish both the body and soul, because no one should sacrifice flavor just to feel “healthy”. She doesn’t follow any particular label when it comes to eating and satisfies her cravings as opposed to a specific diet.Rachel has emerged as a leading voice in the space with her authenticity, creativity, passion and most importantly, her realness. She shares many aspects of her life with her community in addition to her delicious and cravable food.
Many of Rachel’s recipes are gluten-free, paleo, nut-free and plant-based, but you can also find her frequently eating a few slices of pizza or a grass-fed burger and onion rings with her husband and son, Ezra. After being fired from her job as an Earned Media Manager at a CPG start up nearly 5 years ago, Rachel has been fully dedicated to her own brand. In just a short amount of time, she has published the best-selling cookbook with Clarkson Potter, Just the Good Stuff, and has continued to scale her presence to get her recipes into as many kitchens as possible.
