Healthy Office Lunch Ideas Part III
So this recipe is super easy
- 1 can wild caught tuna
- Organic mayonnaise (I use this brand)
- 2 hard boiled eggs
- 1 tomato
- 1-2 cups lettuce of your choosing ( I like mixed greens)
- Salt and pepper to taste
- Hot sauce (optional. I use Cholula)
Mix tuna and mayo to consistency you like. I like mayo so I use equal parts tuna and mayo. Put lettuce down in bowl. Layer tomato and hard boiled eggs. Scoop tuna on top and sprinkle with salt and pepper and hot sauce if desired.
Tip. You can also use balsamic dressing on this if you want more of a salad feel.

Eggs and Spinach
Made the night before and brought to work.
- 3 Eggs
- 1 pack of spinach ( I used the bagged kind found in the grocery store)
- 2 tablespoons ghee
- Salt and pepper
- 1 tsp Garlic powder
Sautee spinach in 2 tablespoons of ghee. While that is cooking I beat 3 eggs in a bowl (like you are making scrambled eggs). Once the spinach is cooked down I pour the eggs over top and fold over until down. I season with a 1 teaspoon of garlic powder and salt and pepper to taste.
