It’s October and if you haven’t jumped on the pumpkin spice train yet, now is the perfect time! And if you haven’t yet, I commend your self-control. Here at the office we started at the end of August!
But if I can be honest, store bought pumpkin spice products just taste fake to me – especially the pumpkin drinks. I can tell that my latte and the grocery store coffee creamer are filled with different chemicals that simply resemble pumpkin but aren’t actually pumpkin. That isn’t how I want to celebrate this delicious gourd and I definitely know that those chemicals are not helping me reach my health goals by any means. Not to mention the dairy and all the added sugar – no thank you.
You won’t get me to stop wanting pumpkin spiced coffee, so I decided to make a creamer that I don’t have to feel bad about. This creamer is the perfect addition to my coffee on these chilly fall mornings. I tried this homemade pumpkin spice coffee creamer a few weeks ago, and I knew that I had to share it with you. I hope you love it as much as I do!
Pumpkin Spice Coffee Creamer
- 1 can full-fat coconut milk
- ¼ cup organic pumpkin puree
- 1 tablespoon pure date syrup or to taste
- 1 teaspoon cinnamon
- Place all ingredients in a blender and blend for 1 minute or until fully mixed.
- Transfer to airtight container and store in fridge.
Note: Ingredients will separate in the fridge. Stir, shake, or reblend before use.
